Ingredients:

2 jumbo Idaho potatoes
2 large eggs
1 med onion
1 tb lemon juice
1/4 cup matzoh meal
1/2 tsp salt
1/4 tsp pepper
oil for frying


Instructions:

Process onions. Add eggs & mix well. Empty processor. Use grating blade and grate potatoes. Squeeze out excess liquid & add to onions. Add lemon juice. Return to processor to mix with metal blade. Add other ingredients & process. Heat oil in fry pan & spoon in 1 heaping tablespoon at a time into oil. Fry till golden & drain on paper towel. Reheat in oven before serving.
