Eggplant ParmesanCuisine: Pesach Category: Entre Servings: 6 Ingredients:2 eggplants (1 1/2 lbs ea)olive oil spray 3 oz grated Parmesan cheese 1 cup flavored bread crumbs 1/4 tsp garlic powder 1/2 tsp paprika 1/2 tsp onion powder 1/2 lb shredded Mozzarella cheese (2 cups) 2 eggs 2 tbs cold water 8 oz tomato sauce 1 tsp italian seasoning Instructions:Preheat oven to 450. Peel eggplant and slice lenghtwise into 1/2" slices. Spray cookie sheet. Dip into eggs mixed with water &t hen into bread crrumbs & single layer on cookie sheet. Spray again. Sprinkle lightly both sides with garlic powder & parmesan cheese. Bake for 20 to 30 min. Turn eggplant over and bake for another 15 to 20 min. Remove from oven & top each slice with 2 tbs of tomato sauce, 1 tsp parmesan cheese, & mozzarella. Return to oven for 10 to 15 min or until cheese melts.
