Flounder Filets With AlmondsCuisine: Pesach Category: Fish Servings: 4 Ingredients:1/4 cup flour2 large eggs 2 tsp grated parmesan 1 tbs chopped fresh parsley 1/2 tsp salt 1/4 tsp pepper 2 tbs olive oil 1 1/2 lbs flounder filet (4 large filets) 2 tbs butter 1/3 cup sliced almonds 3 tbs lemon juice 2 tbs dry white wine Instructions:Place flour in shallow dish. Set aside. Combine eggs cheese, parsley, salt & pepper in shallow dish. Heat oil in skillet over medium heat til hot. Dredge fish in flour, shake off excess & dip in egg mixture, drain excess. Cook fish in oil for 3 to 5 min on each side til golden brown. Cook in batches if necessary, dont overcrowd. Transfer fish to plate, cover loosely & keep warm. Wipe skillet clean. Heat butter in skillet over medium heat. When butter foams, stir in almonds and brown lightly. Remove from heat & stir in lemon juice & wine.
