Chicken & Basmati Rice

Ingredients:

1 1/2 lbs chicken cutlets
corn flake crumbs
egg
oil
2 minced garlic cloves
2 diced oinons
1 green pepper
1 red pepper
8 oz mushrooms
1 1/2 cups basmati rice
1/4 cup soy sauce
1 1/2 cups chicken bullion


Instructions:

Dip cutlets into crumbs & then into egg & fry in a little oil. Remove cutlets & add diced onions, peppers. Saute til soft. Stir fry mushrooms in a tbs soy sauce. Mix rice with 1/4 cup soy sauce & line large sprayed baking pan. Layer chicken cutlets in center of pan on the rice & add vegetables around cutlets. Other vegetables can be added at this point such as sliced carrots, zucchini, etc. Add 1 1/2 cups bullion & cover tightly. Bake at 350 for 1 hr. til rice is done.
