Eggplant Slices with Mozzarella

Ingredients:

2 eggplants
Kosher salt
2 beefsteak tomatoes
or tomato sauce
2 eggs
2 tbs water
corn meal
spray oil
basil leaves
mozzarella slices
salt & pepper


Instructions:

Slice eggplant to 3/8" round slices & lightly sprinkle with kosher salt on both sides. Place between to plates & top with weight to extract excess moisture & bitterness for 10 min. Beat eggs & water slightly in a deep dish. Lightly salt tomato slices & let drain for 1 hr. Heat oven to 450. To remove excess moisture from eggplant slices, pat dry dont rinse. Spray large cookies sheet. Dip eggplant slices into corn meal & then into egg mixture Place single layer on sprayed cookies sheet. Brush oil on, or spray eggplant. Bake until soft & lightly brown. Place a slice of tomato on eggplant slice & a slice of mozzarella cheese and a basil leaf drizzle a little oil & heat until mozzarella melts. Serve immediately Variation: Roll it and brush with oil, top with crumbs and bake til cheese melts. Drizzle heated marinara sauce and serve. can be served as appetizer.
