Arroz con Frijoles

Ingredients:

1 19 oz kidney beans,
1 lbs onion
1 green peppers
15 oz can diced tomatoes
6 garlic cloves
1/2 tb kosher salt
1/4 tsp hot pepper
2 tbs oil
1 1/2-2 cups cooked rice
1 cup tomato juice.
1 cup hot chicken broth(Parve)


Instructions:

Cook long grain rice according to directons. Drain & rinse kidney beans. Saute chopped onions, diced peppers and garlic til golden. Add spices. Mix well. Saute for another 5 min. Add beans, cooked rice, tomato juice & broth. Simme covered until rice and beans are soft , about an hour. Check every 20 min. Liquid should be mostly absorbed. if not add more water or tomato juice. Simmer last 20 min uncovered if there is too much liquid. Taste & adjust seasoning. Rice should be slightly overcooked. Serve with meat or chicken. Can be made ahead as the ingredients absorb flavors. Can be frozen serves 8
