Eggplant & Potatoes-(My Mothers Recipe)

Ingredients:

2 eggplants, peeled, cubed
2 large onions
2 tbs olive oil
salt & pepper to taste
1 large potato serves 2


Instructions:

Chop onions or cube. Heat oil in saute pan. Add onions & eggplant and seasoning. Saute until eggplant is completely soft and mushy. It takes at least 1/2 hour or longer. Boil potatoes and mash with a little margarine. Add eggplant mixture. Eggplant mixture can be frozen before the addition of boiled potatoes.
