Zucchini-Tomato Gratin

Ingredients:

4 tbs margarine
3 tbs olive oil
1 1/2 lbs zucchini (about 3) peeled & thinly sliced
1 med onion finely chopped
1 garlic clove, chopped
4 med round tomatoes, coarsley chopped
salt
ground pepper
1/2 cup unflavored bread crumbs


Instructions:

Preheat oven to 400. grease a shallow oven proof dish. In large skillet, heat 2 tbs margarine & tb. oil. Add sliced zucchini. Cover & cook for 5 min or until tender. Set aside. In another skilled (med) warm 2 tbs olive oil over moderate heat & add onions and cook for 5 min. Add garlic & continue cooking for 1 more min. Reduce heat add chopped tomatoes. Cover & simmer for @ 15 min. Season with salt & pepper. Pour off some of liquid. Stir zuchini into tomatoes & mix. pour into prepared dish/ Sprinkle with bread crumbs and dot with reaming 2 tbs of margarine. Bake uncovered 25-30 min until golden & crisp.
