Blueberry Muffins 2

Ingredients:

jam:
1 cups fresh blueberries
1 tsp sugar
2.5 cups flour
2.5 tsp baking powder
1 tsp salt
1 cup blueberries
2 eggs
1 1/8 cup sugar
4 tbs butter or margarine
4 tbs oil
1.5 tsp vanilla
1 cup buttermilk
topping:
1/3 cup sugar
1.5 tsp lemon zest
1.5 tsp grated lemon zest


Instructions:

In saucepan, heat 1 cup berries with 1 tsp sugar. Cook about 6 min stirring break down most berries to evaporate moisture. makes 1.4 cup jam. set aside and let cool. Mix 1/3 cup sugar with grated lemon zest and set aside for topping. Preheat oven 425 Place muffins in upper rack and bake about Whisk eggs and sugar til well blended and yelow in color. Add margarine, oil, vanilla, buttermilk. (substiture a mixture of parve sour cream and coffee rich for parve). Blend dry ingredients add berries and then add to wet mixture. Fold in slowly as you dont want to overmix. Batter should be lumpy. Spray muffin til Use scook and place one scoop in each cup. Add 1 tsp jam in center of each and swirl around (2x). Sprinkle with sugar mixture. Place muffins in upper rack and bake about 18 min Top will be slightly bown and spring back. Cool before removing from pan. Not tried
